Roast Vegetables

Ingredients

300g baby potatoes, cut in quarters

300g sweet potatoes, peeled

250g parsnips, peeled

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried parsley

Pinch of salt

Step by step

  • Cut sweet potatoes lengthways and into 1-2cm chunks. Cut parsnips into quarters.
  • Place potatoes, sweet potatoes and parsnips into a large shallow square casserole dish. Cook, covered for 8-10 minutes on MICROWAVE HIGH (100%). Drain.
  • PREHEAT OVEN 250˚C.
  • Combine oil, oregano, parsley and salt. Pour over vegetables, coat evenly.
  • Cook for 25-30 minutes on LOW MIX 250˚C.
