Special Fried Rice

Ingredients

2 cups jasmine rice

1 teaspoon vegetable stock powder

4 cups water

30g butter

1 carrot, grated

100g green beans, sliced

100g green beans, sliced

½ leek, sliced

1 x 125g can corn kernels

150g cooked peeled prawns, cut into bits

2 eggs lightly whisked

Step by step

  • In a large microwave safe glass bowl, add the rice, vegetable stock and water. Cover and cook for 14-16 minutes on HIGH (100%), stirring after 7-8 minutes. Set aside.
  • In a large microwave safe glass bowl, melt butter on HIGH (100%) for 30 seconds. Add the grated carrots, beans, leek and mix. Cook for 3 minutes on HIGH (100%), stirring every minute.
  • Add the corn and prawns, cook for 2 minutes on HIGH (100%).
  • In a small microwave safe glass bowl, cook eggs on MEDIUM HIGH (70%) for 1-2 minutes, stirring every 30 seconds.
  • Add all the ingredients together and mix well.
