Tandoori Style Vegetables
1 tablespoon natural yoghurt
1 teaspoon fresh ginger, grated
¼ teaspoon chilli powder
2 teaspoons paprika
1 teaspoon curry powder
1 teaspoon oil
½ teaspoon lemon juice
1 small sweet potato (approximately 200g)
2 medium carrots
1 medium potato (approximately 180g)
Step by step
- Peel and wash all vegetables and cut into serving sized pieces and place into a large shallow casserole dish.
- Cook for 8-10 minutes on MICROWAVE HIGH (100%). Drain.
- PREHEAT OVEN 250˚C.
- In a separate bowl, combine yoghurt, ginger, chilli, paprika, curry, oil and lemon juice. Mix until well combined. Coat vegetables
- Place vegetables back into the large shallow casserole dish. Cook for 25-30 minutes on LOW MIX 250˚C, mixing twice during cooking.
