Vegan No Bake Mint Slice

Ingredients:

For the Base:

3 tablespoons coconut oil

1 cup almonds

½ cup desiccated coconut

1 cup pitted medjool dates

3 tablespoons raw cacao powder

For the Mint Cream:

2 cups cashews, soaked overnight in filtered water

4 tablespoons water

¼ cup coconut oil

½ cup maple syrup

½ bunch fresh mint leaves

For the Chocolate Icing:

5 tablespoons coconut oil

3 tablespoons maple syrup

4 tablespoons raw cacao powder

Step by Step

For the base:

  1. Line a 20cm x 20cm baking tray with baking paper.
  2. Melt the coconut oil in the microwave for 10 seconds at 1200W.
  3. Process all of the ingredients in a food processor until the mixture resembles crumbs and sticks together.
  4. Press the mixture firmly into the prepared baking tray, then place in the freezer to set while you prepare the mint cream layer.


For the mint cream:

  1. Melt the coconut oil in the microwave for 10 seconds at 1200W.
  2. Blend all of the ingredients in a blender on high speed until smooth and creamy.
  3. Spread evenly over the base layer.
  4. Freeze until set.


For the chocolate icing:

  1. Melt the coconut oil and maple syrup together in the microwave for 10 seconds at 1200W.
  2. Add the raw cacao powder and mix well until smooth.
  3. Spread evenly over the mint cream layer.
  4. Freeze until set for at least an hour.
