Cheerful Christmas Muffins

With Christmas just around the corner, these muffins offer that great spicy fruit flavour to help bring in the festive season.


  • 1 tsp all spice
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup sultanas
  • 1 cup currants
  • ½ cup raisins
  • ½ cup mixed peel
  • ½ cup silvered almonds
  • ⅔ cup brandy or sherry
  • ½ cup water
  • 185g butter, chopped
  • 3 eggs, lightly beaten
  • 1½ cups plain flour
  • ½ cup self-raising flour
  • 1 tsp bicarbonate soda
  • 1 heaped tbsp cocoa
  • Olive oil spray
  • Glazed cherries, for decoration
  • Icing sugar, for decoration

Step by Step Guide

Step 1.

Combine spices, dried fruit, mixed peel, almonds, brandy or sherry, water and butter in a large microwave safe glass bowl. Cook on 100% microwave power for 5 minutes then stir.

Step 2.

Transfer the mixture into a large tray, approx. 2cm deep and leave this for 20-30 minutes to cool slightly.

Step 3.

Transfer mixture back into the glass bowl and stir through the eggs. Sift the flours, bicarbonate soda and cocoa into mixture and fold through.

Step 4.

Grease a silicon 6 hole muffin tray* using olive oil spray. Fill muffin holes with a heaped tablespoon of mixture and flatten the top with the spoon. Cook on 30% microwave power for 5-10 minutes until skewer inserted comes out clean. Please note the top of the muffin may look a little undercooked. This is OK as cooking will continue upon standing.

Step 5.

Stand the muffins in the pan for 10 minutes before turning onto a wire rack to cool completely.

Step 6.

When cooled, place a glazed cherry on top of each muffin and sift over icing sugar.

Makes 18 muffins
*Do not use metal in the microwave as it may cause arcing.
