Chorizo Baked Eggs

Try breakfast a little differently with this easy recipe


  • 1 chorizo, sliced in half lengthways, halved lengthways again then sliced finely
  • 2 short cut bacon rashes, finely chopped
  • 400g tin tomatoes
  • ⅓ cup tomato paste
  • 25g (handful) baby spinach
  • 4 eggs
  • Basil, to serve
  • Feta, to serve

Step by Step Guide

Step 1.

Spray the base of a square ceramic microwave safe dish with olive oil spray. Place the bacon and chorizo into the dish and cook at 100% for 3 minutes.

Step 2.

Pour in the tinned tomatoes, tomato paste and spinach and stir to combine.

Step 3.

Make 4 holes in the mixture and crack an egg into each hole. Pierce the top of each of the egg yolks and whites with a fork and cook at 100% for 10 minutes or until the egg white is cooked and white in colour.

Step 4.

Sprinkle with crumbled feta and basil. Serve.

Note: This recipe was created using an 800W microwave. If using a higher powered microwave, you will need to reduce the cook time.
