Ingredients:

  • ½ cup chopped almonds
  • ½ cup pepitas
  • 2 cups rolled oats
  • ¼ cup almond meal
  • ½ cup desiccated coconut
  • ½ cup goji berries
  • ¼ cup coconut oil
  • ¼ cup honey
  • 1 teaspoon cinnamon
  • Pinch of salt

Step by Step:

  1. Place the almonds and pepitas in a single layer on a microwave safe plate. Heat on 1200W for 1 minute at a time for up to 5 minutes or until the nuts and seeds are lightly toasted. Toss the nuts and seeds every minute to ensure that they are toasted evenly. Set aside.
  2. In a small microwave safe bowl melt the coconut oil and honey together for 30 seconds at 1200W.
  3. In a large bowl combine all of the dry ingredients. Then pour in the coconut oil and honey, mix until well combined.
  4. Roll tablespoonfuls of the mixture into balls. Store in the refrigerator.
