Cherry Tomato Frittata
200g cherry tomatoes
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
¼ cup plain flour
4 large eggs, lightly beaten
3 tablespoons sour cream
1 cup milk
¼ teaspoon salt
Pepper to taste
1 cup shredded cheddar cheese
Step by step
- PREHEAT OVEN 200˚C.
- Cut tomatoes in half and place into a lightly greased 2 litre casserole dish. Sprinkle parsley and chives over tomatoes.
- Place the flour into a medium sized bowl. Add the eggs and whisk until well combined. Slowly add the sour cream, milk, salt and pepper.
- Gently pour this mixture over the tomatoes, sprinkle with the cheddar cheese.
- Cook for 23 minutes on LOW MIX 200˚C.
