Chilli Beef and Beans


1 kg minced beef

1 large onion, chopped

3 cloves garlic, finely chopped

2 stalks celery, chopped

1 large green capsicum, chopped

1 x 170g can tomato paste

2 x 420g cans red kidney beans, drained

1 x 410g can tomato puree

½ cup water

1 tablespoon chilli powder

1 teaspoon ground cumin

 1 teaspoon dried oregano

1 teaspoon salt

¼ teaspoon cayenne pepper

Step by step

  • In a 3 litre microwave safe casserole dish, add the mince. Cook for 6-9 minutes on HIGH (100%), stirring half way through, until the beef turns light brown. Drain.
  • Add the remaining ingredients and stir well. Cover and cook for 8-10 minutes on HIGH (100%).
  • Stir then cover and cook for 45-55 minutes on MEDIUM (50%), stirring several times during cooking.
  • Serve with rice, fresh bread or mashed potato.
