Freshly Seasoned Grilled Rack of Lamb
30ml olive oil
30ml lime juice
3 tablespoons fresh coriander, chopped
1 teaspoon ground cumin
1/2 teaspoon ground coriander
2 cloves garlic, crushed
1 teaspoon salt
½ teaspoon ground black pepper
1 rack of lamb, approximately 8 cutlets
Step by step
- In a small bowl, combine the olive oil, lime juice, fresh coriander, ground cumin, ground coriander, garlic, salt and pepper.
- Place the lamb into a shallow casserole dish and add marinade. Cover and refrigerate for 2-3 hours or overnight.
- PREHEAT OVEN 200˚C.
- Place the lamb on the low rack. Cook for 12-18 minutes in HIGH MIX 200˚C, turning over halfway through.
