Filling:

·  300g Peaches

·  300g Plums

Crumble Topping

·  1 Cup rolled oats

·  ½ Cup flaked almonds

·  ½ Cup almond meal

·  1 Teaspoon cinnamon

·  ½ Teaspoon nutmeg

·  1 teaspoon vanilla extract

·  3 Tablespoons coconut oil

·  Coconut yoghurt to serve

Method:

  1. Preheat the convection oven to 210°C.
  2. Remove the stones from the peaches and plums. Then cut into wedges or bite sized pieces.
  3. Place the fruit in the base of a baking dish, set aside.
  4. For the crumble topping combine the oats, flaked almonds, almond meal, cinnamon, nutmeg, vanilla and coconut oil in a large bowl. Mix until well combined.
  5. Sprinkle the crumble mixture over the fruit.
  6. Place the baking dish onto the high rack and bake at 210°C for 35 minutes or until the top is golden.
  7. Serve with coconut yoghurt if desired.
