Herbed Roast Beef


¼ cup fresh parsley, chopped

1 tablespoon fresh coriander, chopped

1 tablespoon fresh chives, chopped

¼ teaspoon cracked black pepper

Salt to taste

Oil to brush

1kg beef roast

Step by step

  • PREHAT OVEN 160˚C. In a small bowl combine the parsley, coriander and chives. Spread the herb mixture over a clean chopping board.
  • Evenly brush the beef with oil. Roll the meat over the herbed mixture, coating evenly, season with salt and pepper.
  • Place the beef on the LOW RACK. Cook for 35-40 minutes on HIGH MIX 160˚C, rotating halfway through. Stand for 10-15 minutes covered with foil before serving.
