Lemon Fish Fillet

Ingredients

4 x 150g ocean perch fillets

1 tablespoon lemon juice

20g butter

Salt and pepper to taste

1 tablespoon lemon-rind to garnish

Step by step

In a 2 litre microwave safe casserole dish, place the fish in a single layer.

Pour over the lemon juice, distribute the butter in small pieces and season to taste with salt and pepper.

Cover and cook for 5-7 minutes on MEDIUM HIGH (70%), turning half way through.

Allow to stand, covered, for 3 minutes.

Garnish with lemon-rind and serve with a green salad.
