Picnic Pasta Salad
6 cups hot water
3 cups small shell pasta
50g pine nuts
100g snow peas, cut into 1cm slices
1 small red capsicum, diced
100g semi sundried tomatoes, finely chopped
1 small Spanish onion, finely diced
1 tablespoon finely chopped basil
1 teaspoon brown sugar
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
Step by step
In a large microwave safe glass bowl, combine the pasta and hot water. Cook on HIGH (100%) for 10 minutes, stirring half way. Drain and set aside.
Place pine nuts on paper towel on a microwave safe plate, cook on HIGH (100%) for 2-3 minutes stirring every 30 seconds until toasted.
In a large bowl, combine snow peas, capsicum, semi sundried tomatoes, onion, basil and pine nuts. Stir in the pasta.
Add brown sugar, oil, lemon juice, salt and pepper in a measuring cup. Stir until sugar dissolves.
Pour dressing over pasta, stir until well combined.
