Pumpkin Soup


1kg butternut pumpkin, peeled and chopped

2 small onions, chopped

2 cloves garlic, crushed

1 cup chicken stock

Cream (optional)

Salt and pepper to taste

Chopped fresh chives to garnish

Step by step

  • In a 3 litre microwave safe casserole dish, combine the pumpkin, onion, garlic and stock. Cover and cook for 20-25 minutes on HIGH (100%), stirring twice during cooking.
  • Place in a blender or food processor and blend until smooth.
  • Transfer to a serving bowl and stir in the cream.
  • Season with salt and pepper, and garnish with chives.
