Superfood Bars

Ingredients:

  • 2 cups rolled oats
  • ½ cup almonds, chopped
  • ½ cup pepitas
  • ½ cup dedicated coconut
  • ½ cup goji berries
  • 1 teaspoon cinnamon
  • Pinch of salt
  • ¼ cup coconut oil
  • ¼ cup honey

Step by step:

  1. Line a 20cm square baking dish with baking paper. Preheat the microwave oven to 200°C.
  2. In a large bowl combine all of the ingredients and mix until well combined.
  3. Press the mixture firmly into the baking dish.
  4. Place the dish on the high rack and bake for 20 minutes or until golden brown.
  5. Carefully remove the dish from the oven and allow to cool before slicing into bars.
