Vegetable Chicken Patties
400g chicken mince
1 egg white
1 carrot, finely grated
1 fresh birds eye chilli, seeds removed, finely chopped
2 tablespoons fresh chives, chopped
½ teaspoon ground coriander
¼ teaspoon chilli powder (optional)
Salt and pepper to taste
Step by step
- In a large bowl, combine the chicken mince and egg white. Mix until well combined. Add the carrot, chilli, chives, coriander, chilli powder, salt and pepper. Mix until well combined. Cover and refrigerate for 20 minutes.
- PREHEAT GRILL. Set time for 18 minutes.
- Shape mixture into small round patties.
- Place on the low rack. Cook for 14-18 minutes or GRILL, turning once during cooking.
NOTE: You can roll the patties in breadcrumbs before cooking for a more crispy and crunch finish.
