Winter Chickpea Curry

Winter Chickpea Curry

Created using a 1000W R34DMBK Microwave

Ingredients:

Curry Paste:

½ bunch coriander

½ red onion, diced

2 cloves garlic, crushed

1 knob ginger, grated

1 teaspoon garam masala

1 teaspoon ground cumin

2 tablespoons tomato paste

2 tablespoons olive oil

Salt and pepper to season

Other:

400g can tinned tomatoes

1 red capsicum, chopped

400g can chickpeas, drained and rinsed

2 cups baby spinach leaves

Basmati rice to serve

Method:

  1. In a food processor, process curry paste ingredients until a thick paste is formed.
  2. In a large microwave safe glass bowl, microwave curry paste for 1 minute on HIGH 100%.
  3. Remove bowl from microwave and add crushed tomatoes and capsicum. Microwaves on HIGH 100% for 3 minutes.
  4. Remove bowl from microwave and add chickpeas and spinach. 
  5. Microwave on HIGH 100% for 1 minute.
  6. Serve with rice
